[there's a moment Sam hesitates in the handshake - just a moment - but hides it well enough, the grin in full force like it never left. Coming from a place like Bon Temps, you don't usually see guys who could be called pretty as soon as handsome, but that's definitely something that applies here. Those features are surprisingly delicate.]

Thanks. [he settles in his seat, nodding as he's prompted.] Right, 'course. Well, I basically built the place from the ground up. Bought the building, made the menu, been runnin' it for over a decade. We've had our fair share of difficulties - [and more than their fair share, mostly supernatural bullshit] - but we've weathered through it like a family. That's important to me, that concept of family. 'Cause these are people you work close with, every day, all of you workin' for a common goal. If you aren't lookin' out for each other as a family would, not only are you not gonna work as cohesively, be as invested, but your place won't have any heart. And customers notice that sort of thing, I'm sure you know.

Merlotte's didn't have any food or drinks you couldn't get at other places, but what made it the cornerstone of my town was that everyone on my staff cared and looked out for each other. I nurtured the sort of environment where that could happen. That's what I'd like to bring to Club Rapier.

[Oh, there's a tougher question. Sam has the pause there, frowning as he honestly considers the question. He knows what this place is, he isn't an idiot, but...]

...I'm not gonna lie and say I like it. Hell, I think 18 is probably still too young for this sort of work. ...But they're in the same boat we are. I get that. They have to make their way in this city too, and so long as we're doin' everything we can to make sure they get a say in who they see and what they do, as long as we're here to protect them, then I can be all right with it. ...So long as I'm not expected to be with them that way.
